So I found some french loaf bread and remade the sandwiches (pictured above) - so much better with thick bread!
I'm going to say, I'll probably be sick of blueberries soon, as much as you will be sick of hearing about blueberries.... but not yet! Here's another blueberry inspired dish, in sandwich form. And once again, a guest appearance by Goat Cheese (one of my favorites :D). I saw a picture of a blueberry grilled cheese on Pinterest and was dying to make one. With that giant flat of blueberries I got from Trader Joe's, there was plenty of berries to go around.
Blueberry Balsamic Goat Cheese Grilled Cheese
Prep time: 15 minutesCook time: 10 minutes
Yield: 1 blueberry grilled cheese
Ingredients
1 cup of blueberries
1 tbsp balsamic vinegar
1 tsp sugar
2 slices bread
1.5 oz goat cheese
1/2 cup raw spinach
Instructions:
Add blueberries, balsamic, and sugar to a pot, heating on high until boiling. Using a mixing spoon, smash blueberries against the side of the pan. Once mixture is boiling and blueberries are mashed (about 5 minutes), remove from heat and strain. Save juice if you would like (will turn into a jam once cooled).
Spread blueberry balsamic on a slice of bread then crumble 1/2 of goat cheese over blueberry spread.
Add spinach then crumble remaining goat cheese mixture over spinach. Sandwich with 2nd slice of bread.
Spray a pan with cooking spray or olive oil. Grill sandwich over medium heat until bread is toasted and cheese is melting - about 4-5 minutes depending on the heat of your stove. Flip sandwich and grill on other side until cheese is melted and bread is toasted.

ReplyDeleteIt's super easy to make! I would suggest using fluffier thicker bread slices instead of sandwich bread though. When I grilled mine it got so flat haha.
DeleteI made this today for lunch - it didn't turn out anywhere as pretty as yours (my goat cheese at home was already crumbled so it kept falling out), but it was delicious! Thanks for sharing the recipe! Look forward to eating many more and seeing what the leftover juice/jam turns out to taste like :)
