Nectarine and Peach Pizza


Summer is here and nectarines and peaches are dropping faster than we can pick! My friend Jen's house had literally HUNDREDS of delicious nectarines and sweet as can be peaches. After a couple hours of picking we ended up with boxes overflowing with beautiful stone fruit. Now what to do with them. We were making nectarine and peach everything for days. From pies, to jam, to cobbler and ice cream we tried it all! I even tried making nectarine ravioli but the flavor was overpowered by the goat cheese :D. 




One of my favorite things to make with these fruits was pizza! It was so incredibly easy and tasty. A beautiful combination of savory and sweet. 


Nectarine Pizza 

Prep time 15 minutes, Cook time 12-15 minutes

Ingredients:

1 can pillsbury pizza dough (i used thin crust)2 tbsp olive oil
1 cup shredded mozzarella cheese
1 cup arugula
3 strips of prosciutto torn into small pieces
1/2 cup cherry tomatoes halved
2 medium nectarines or peaches, sliced
1/2 cup mozzarella cut into small chunks
1 jalapeno slices (optional)
2 tbsp balsamic glaze (optional)
2 tbsp candied walnuts, chopped (optional)

Instructions:


    1. Preheat oven to 450 degrees F and grease a baking sheet.
    2. Roll out pizza dough onto baking sheet 
    3. Drizzle olive oil across pizza dough
    4. Sprinkle shredded mozzarella evenly across dough
    5. Top with arugula, prosciutto, cherry tomatoes, nectarine slices, mozzarella chunks, and jalapeno slices
    6. Bake according to pizza dough instructions (about 12-15 minutes) until edges are golden and crispy
    7. Drizzle with balsamic glaze sprinkle on candied walnut pieces.
    8. Slice and serve warm
